Discovering the Deliciousness of Asparagus: Baked with Lemon Juice and Garlic
Asparagus is a vegetable that often gets overlooked in the produce aisle, but for those who have discovered its deliciousness, it’s a favorite that can be enjoyed in a variety of ways. For me, my love for eating asparagus has grown over time, especially since I discovered that baking it with lemon juice and garlic can take its flavor to the next level.
When I was young, I didn’t like vegetables, especially not asparagus. As I grew older I started to realize that it was not vegetables that I did not like, it was how they were prepared. Most of the time they were steamed with no flavor and just became this mushy grossness that was rather repulsive to me. However, as I grew older and started experimenting with different cooking techniques, I began to appreciate the unique flavor and texture of asparagus when prepared differently.
One of my favorite ways to prepare asparagus now is by baking it in the oven with lemon juice and garlic. This simple recipe enhances the natural sweetness of the asparagus while adding a tangy, citrusy flavor and a savory hint of garlic.
To make this dish, all you need is some fresh asparagus, lemon juice, garlic, olive oil, salt, and pepper. Simply wash the asparagus and trim the woody ends, then toss them in a mixture of lemon juice, minced garlic, olive oil, salt, and pepper. Spread the asparagus out on a baking sheet and bake in the oven at 400°F for 10-15 minutes, or until the asparagus is tender and lightly browned.
The result is a delicious and healthy side dish that pairs well with a variety of main courses. The lemon and garlic add a bright, fresh flavor that complements the earthy taste of the asparagus, while the baking process gives the asparagus a slightly caramelized, crispy texture.
Not only is this recipe delicious, but asparagus itself is also packed with nutrients that make it a healthy addition to any diet. Asparagus is a good source of fiber, folate, vitamin K, and vitamin C, among other vitamins and minerals. It’s also low in calories and high in antioxidants, making it a great choice for anyone looking to eat more healthfully.
If you’re looking to add a new vegetable to your diet, or if you’re already a fan of asparagus and want to try a new way of preparing it, give baked asparagus with lemon juice and garlic a try. It’s a simple yet flavorful recipe that can be enjoyed as a side dish or as a tasty addition to salads or pasta dishes. Once you try it, you may find that your love for eating asparagus has grown even more. Plus, your kiddos may even like this dish. Have you ever considered that maybe they do like vegetables but just don’t like the way they have been prepared for them in the past? Food for thought haha.
Wash the bundle of asparagus and cut off the woody ends
Prepare a cookie sheet by covering with heavy duty aluminum foil for easy cleanup
Spead out asparagus on the cookie sheet and drizzle with olive oil
Mince the garlic cloves and spread over the asparagus
Drizzle lemon juice over the asparagus
Using tongs, mix the asparagus over one another to evenly distribute all of the ingredients. Then spread them out flat.
Put the asparagus in the oven for 12-15 minutes. Broil for the last 2 minutes if you prefer a crispy taste.
Pull them out of the oven. If fully cooked, you should be able to easily piece with a fork similar to a cooked potato.
Crack some salt and pepper over top and it is ready to serve
Notes
Alterations:Skip the lemon juice to get a simpler flavor profile. Try shaving your garlic instead of mincing for a more garlic-infused flavor.Leftovers? Best eaten within 2-3 days. After 2-3 days it should still be safe to eat, but the texture gets too mushy for our liking.
