Ingredients For Soup

  • 4 tbsp olive oil
  • 1 yellow onion
  • 2 cloves garlic
  • 6 roma tomatoes
  • 32 fl oz chicken broth
  • 24 fl oz tomato sauce
  • 3 pinch italian seasoning
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch cayenne
  • 4 fl oz heavy cream

Ingredients For Toppings

  • 1 bunch fresh basil
  • 4 oz sour cream
  • 1 oz milk
  • 1 bag shredded parmesan cheese


Tomato Bisque Soup

  • dice the onions and tomatoes
  • mince the garlic cloves
  • set a pot to medium heat and add the olive oil
  • once the oil is hot, add the diced onion, diced tomato, and minced garlic to the pot and sautee until you can see through the onion
  • add in the tomato sauce, chicken broth, and dry ingredients. Let simmer for 20 minutes
  • turn the heat off and blend until the soup is smooth using an immersion blender
  • put the soup on a low heat and slowly whisk in the heavy cream


  • in a separate container, combine the sour cream and milk to create a creamy garnish
  • serve the soup topped with the sour cream topping, fresh basil, and parmesan cheese


Standard Recipe Yields 11 Cups

Flavorful Add Ons: bacon crumbles or ham bits
Blender Options: an emersion blender is preferred because you can stick it right in the pot and don’t risk a hot mess spread across your entire kitchen. If all you have is a standard smoothie blender, it will work. Just make sure the soup is not boiling hot and only fill the blender about halfway. The steam will cause it to slightly pressurize, so make sure to hold the lid on.
Tomato Sauce: canned tomato sauce will work, but the soup will taste better if you find the 24 oz glass jar of tomato sauce
Roma Tomatoes: firm, ripe tomatoes are best
Parmesan Cheese: the best parmesan will come from a solid block that you shred yourself. Preshredded cheese has chemicals that keep it from sticking together and drying out. These chemicals cause the cheese to not melt as well in your soup. If you want to buy pre-shredded cheese, find the bags of cheese in the refrigerated aisle.
